Polly Markus Pizza
Polly Markus, the mastermind behind the renowned Instagram page and recently published cookbook Miss Polly’s Kitchen, holds an unwavering passion for both food and people. We asked Polly to join us at UnserHaus in the NEFF showroom to create a recipe fit for sharing. Here’s what she came up with…
Nduja Pizza with a Herby Cheese Base
1 cup ricotta
150g Parmesan + 1 cup extra for later (see below)
1/2 cup sour cream
150g feta
3 tbsp extra virgin olive oil
2 large garlic cloves
1 cup Italian parsley
Juice of one lemon
1 medium shallot – thinly sliced
Nduja – roughly 3/4 of a cup (1/4 per pizza)
24 large juicy Olives – 8 per pizza
3 tbsp Capers (1 tbsp per pizza)
1 cup of Parmesan – grated
Lots of fresh basil & rocket leaves to serve
Zest of one lemon
Enough pizza dough for 3 pizzas
Make your favourite pizza dough. Preheat the oven on CircoTherm Intensive or Pizza Setting to 230⁰C and place a couple of pizza stones in the oven.
Start with using a food processor, whizz the first 8 ingredients together until smooth. Season with salt and pepper. This is going to be the herby white sauce for the base.
Roll out the pizza dough, using extra flour so that it doesn’t stick to the bench.
Divide the herb cheese sauce evenly onto the three pizzas. Using a large spoon, spread the cheese sauce over your dough in a circular motion.
Sprinkle the sliced shallots over the cheesy sauce, then spoon over about a 1/4 of a cup of nduja onto each pizza (should be about 8 dollops per pizza) then evenly sprinkle the capers and olives. Grate some extra Parmesan on top.
Transfer the pizza to your pre-heated pizza stones and bake until the pizzas are golden and crispy. This should take approx. 12 minutes.
Top with fresh basil and rocket leaves and a light garnish of lemon zest! Enjoy.
