Bosch Recipe: Chicken Marbella by Tim Read

A one pot, throw in the oven meal that is incredibly delicious.

Appliance Used: Bosch Built in Oven and cooktop

Ingredients:
100mL of Olive Oil
125mL Red Wine Vinegar
200g Prunes
100g Green Olives
70g Capers
5 Bay Leaves
5 Cloves of Garlic
20g Fresh Oregano
4 Whole Chicken Legs
250g White Wine
200g Brown Sugar
150g Couscous
50g Parsley, chopped
Salt and Pepper

Method:

  1. Preheat the oven to fan bake 200 degrees. Combine everything aside from the
    couscous and parsley in a roasting dish. Place in the oven for 45 minutes, basting
    half way through.
  2. Cook the couscous according to the packet and fluff with a fork once cooked.
  3. Season the cooked chicken with salt and pepper, it will not need much salt given the
    olives and capers. Top with the parsley and serve on top of the couscous.
