Sweetcorn and goat’s cheese fritters by Sid Sahrawat

Ingredients
Fritter mixture
500 g firm goat’s cheese
300 g sweetcorn, fresh is preferable but frozen also works (defrosted)
50 g achar masala from any Indian grocer
30 g chopped chives
Zest of 2 lemons
2 tbsp plain flour
Tempura batter
150 g plain flour
150 g cornflour
1/2 tsp fine salt
300 ml sparkling water
2 egg yolks
Oil for deep frying
Method
Fritters preparation:
Combine all ingredients into a mixing bowl except the plain flour, portion into small balls and place on to a tray with baking paper until ready to cook. Dust fritters in flour just before coating them in the tempura batter when ready to cook.
Tempura batter preparation:
Combine all ingredients in a bowl and whisk until well combined, leave in fridge until ready to cook the fritters.
To finish:
Heat oil in a large saucepan using Cooking sensor or thermometer to 180°C. Coat the floured goat’s cheese fritters in the tempura batter, fry in hot oil until lightly golden. Drain on kitchen paper and serve.
